BLAIR, Wis. – Associated Milk Producers Inc.'s Cheddar-cheese plant in Blair is retooling to shift production from Cheddar to cottage cheese. When the transition is complete, the new operation is expected to be one of the largest cottage-cheese plants in the country, according to the company.Â
