WOLF CREEK, Mont. – Warmer temperatures at the end of January, ranging up into the 40s, have convinced Scott Blackman’s herd of Columbia sheep that there should be grass growing somewhere.

Scott Blackman learned many key lamb smoking techniques from a friend in Texas that has an agritourism venture, with food being the main draw. The key to a good smoke is choosing the right quality wood, using only salt and pepper and adding “time and patience.”
